Beet Hummus

As you can tell from my previous recipe posts, I like to change up the ordinary food to something different. By now, I’m sure we’ve all seen – baked donuts as oppose to fried and kale and carrot chips as oppose to just salad ingredients. It’s nice to change things up once in awhile! It can actually be fun and you get to add more recipes onto your list for next time.

You know that feeling when you just eat the same thing over and over again, you sometimes get sick of it? Yup. That’s me! My favourite food this month was beets.Β Until recently, I started thinking there’s got to be something else you can do with them. So what did I do to my left over beets? Make hummus! What a great idea and the colour is just so vibrant, who wouldn’t want to eat pink hummus? haha.

Beet Hummus

3 medium beets (cooked)
1 can of chickpeas
2 cloves of garlic
Juice of 1 lemon
1 tablespoon sesame oil
1/3 cup extra virgin olive oil
salt and pepper

1) Chop beets into small pieces
2) Drain water from chickpeas
3) Add all ingredients into a food processor

* You can add more extra virgin olive oil if necessary

Switch things up and treat yourself to some beet hummus today!
