Gingerbread Blondies

Can you believe that the holidays are back for another year? 2017 flew by so fast but it definitely has been a good one. I’ve started a new job that I’m enjoying so much. I’ve payed attention to my well-being a lot this year. I learned to let go of the BS and move on to what is important in my life (I will probably make a “2017 Reflection post” so keep an eye out of for that!).

To start off the holiday season I’ve decided to bake a little something and share with you all. I actually got this recipe from Simple Hacks Living but I’ve adapted it with ingredients I had. For those that are vegan or want to try a vegan option, be sure to try their recipe out! It’s another great alternative.

Normally, to start of the season I would bake Christmas cookies. You know the drill – sugar cookies in the shapes of Christmas trees, candy canes, stars. But I wanted to change it up this year. And I’m so glad I did because these are so so so good! They’re chewy, fudgy and they also don’t over power on the ginger. Which is great for those who is not much of a fan of that gingery taste. Gingerbread Blondies

2 cups of all purpose flour
1/2 tsp Baking Soda
1 tbl Cinnamon
2 tsp Ginger
3/4 tsp Ground Cloves
1/4 tsp Salt
1 1/2 cup Brown Sugar
1 cup Butter
2 Eggs
2 tsp vanilla
2 tbl Molasses

1. Preheat the oven to 350 Degrees F
2. Mix the dry ingredients to one bowl
3. Mix the wet ingredients to another bowl
4. Pour the dry ingredients to the wet ingredients bowl
5. Once it is mixed well. Pour it onto a 9×13 baking pan lined with parchment paper
6. Bake for 35-45 mins
7. Enjoy!
